My friend Annette gave me this mandel bread recipe; she got it from our mutual friend Ann. I’ve been making it for over 40 years. It’s a family favorite.
Ingredients:
- 3 eggs
- 1 1/3 cup sugar
- 1 teaspoon vanilla extract
- 4 cups flour
- 2 teaspoons baking powder
- less than 1 cup oil
- less than 1 cup chocolate chips
Directions:
- In a large bowl, mix eggs with a fork. Add sugar and vanilla.
- In a medium bowl, mix flour and baking powder.
- Measure oil.
- Add flour and oil to egg mixture alternately, ending with flour.
- Add the chocolate chips.
- Grease cookie sheets (or use parchment paper). Shape dough into at least 4 loaves.
- Bake 350 degrees for 30 minutes.
- Remove cookie sheet(s) from oven and lower oven temperature to 300° F.
- Slice mandel bread with a sharp knife. Sprinkle cut slices with cinnamon and sugar
- Return to oven for 10 minutes.
- Freezes well.
